I was craving my mom’s youmo today, what most people call scallion pancakes. My rental place doesn’t have the best kitchen setup, but I figured I’d give it a shot anyway.
1. Ingredients
Wheat flour (preferably high-gluten), scallions, sesame oil, peanut oil, salt, and whatever other seasonings you like.
2. Steps
1. Make the dough
Add flour to a bowl (high-gluten flour works best). Pour in warm water gradually while stirring with chopsticks. Once the flour forms flakes, knead it into a dough by hand. Keep the dough on the softer side for good stretchability. Cover with plastic wrap and let it rest for 20 minutes.

2. Roll out the dough
After resting, knead the dough into a long strip.

Scallion pancakes are made by layering the dough, so roll it out as thin as you can.

3. Add the filling
Drizzle sesame oil over the dough, then fold it over repeatedly until the oil is evenly spread across the surface.

Sprinkle chopped scallions and a pinch of salt evenly over the top.

4. Shape the pancake
Fold the scallion-covered dough from one corner inward, layering it up.

Roll the folded dough flat again.

5. Pan-fry
Watch the oil temperature. On a home gas stove, low heat and slow is the way to go.
